Tips for baking a crust using a pizza pan

A round pizza pan with holes in the bottom is a great option for making pizza crust. It allows for better circulation and cooks the dough more evenly. When using a pizza pan, pan on doing two rounds of baking. The first round is a 15 minute bake to get the crust started. The second is after you put on your favorite toppings, then its just a quick 10 minutes back in the oven. See detailed instructions below.

Tips for baking a crust using a pizza stone

A pizza stone is a fun and easy way to really get that crispy pizza crust, whether you're going for thin or thick crust. The key is to put the stone in the oven while its preheating up to 425 degrees. Then using either a pizza pan or paddle, you'll slide your pizza dough complete with all the toppings onto the stone for only one round of baking. See detailed instructions below.

Ingredients:

  • Parker House Gluten Free Bread Mix
  • 1 Tbsp yeast (included in package) (10g)
  • 1 cup warm water (110 degrees)
  • 2 Tbsp melted butter (28g)
  • extra gluten free flour for dusting

Instructions for a Pizza Pan:

  1. Preheat the oven to 200 degrees and then TURN IT OFF.
  1. In a stand mixer, using the paddle attachment, add all your ingredients to the bowl and slowly mix. Scrape down the sides and then turn up the mixer to a medium speed for 2 minutes.
  2. While that's mixing, cut a piece of parchment paper just larger than your pan size. Lay your piece of parchment paper on the counter and lightly dust with some Parker House Gluten Free Flour.
  3. Place ball of dough on floured parchment paper and make sure all sides of the dough ball are lightly coated with flour. Roll out dough with a rolling pin until dough is quite thin ¼ for thick crust and ⅛ for thin crust and makes a 16 in round pizza
  4. Transfer the dough( and the parchment paper) onto a pizza pan, cover with plastic wrap, and let it rise in the warm oven for 20-30 minutes
  5. Preheat oven to 425 degrees
  6. Bake the pizza dough for 15 mins or until golden brown.
  7. Take it out of the oven and pull out the parchment paper from underneath, keeping the partially cooked crust on the pan. 
  8. Top with your favorite sauce and toppings
  9. Place pizza back in the oven for another 10 minutes or until desired “doneness” is achieved.

Instructions for a Pizza Stone:

  1. Preheat the oven to 200 degrees and then TURN IT OFF.
  1. In a stand mixer, using the paddle attachment, add all your ingredients to the bowl and slowly mix. Scrape down the sides and then turn up the mixer to a medium speed for 2 minutes.
  2. While that's mixing, cut a piece of parchment paper just larger than the size you're planning to make your pizza. Lay your piece of parchment paper on the counter and lightly dust with some Parker House Gluten Free Flour.
  3. Place ball of dough on floured parchment paper and make sure all sides of the dough ball are lightly coated with flour. Roll out dough with a rolling pin until dough is quite thin ¼ for thick crust and ⅛ for thin crust and makes a 16 in round pizza
  4. Transfer the dough( and the parchment paper) onto your pizza stone, cover with plastic wrap, and let it rise in the warm oven for 20-30 minutes
  5. Using a pizza paddle or pizza pan, take the pizza dough out, leave the stone in the oven and preheat oven to 425 degrees
  6. Add your sauce and top the pizza dough with your favorite toppings
  7. Using a pizza paddle or pizza pan, place the pizza on the hot stone in the oven. Be oh so careful!
  8. Bake the pizza dough for 25 mins or until golden brown.
