Tips for making the Apple Fritter Cake
When mixing all the ingredients, I highly recommend using a counter mixer, and mixing it on a medium speed for at least a minute. This really helps activate the xanthan gum and bring everything together.
Wait to shred the apples until right before using them. If you make the apple mixture (apple, cinnamon, brown sugar) too far ahead of time, the apples begin to macerate too much. This creates an unnecessary amount of liquid and dilutes the flavor of the mixture.
For any and all baking I highly recommend having an internal oven thermometer. This lets you know if your oven is at the proper baking temperature and saves a lot of under/over baking products.

Ingredients:
- 1 pouch Parker House Pancake/Waffle mix
- 1 tsp (6g) baking powder
- ¼ tsp salt
- 1 cup (200g) white sugar
- 6 Tbsp (84g) melted butter or butter substitute
- 2 eggs
- 2 tsp vanilla
- ⅔ cup (160g) almond milk or milk preference
- 1 cup or (200g) peeled, cored, and shredded granny smith apple
- 5 Tbsp (63g) brown sugar
- 1 tsp (3g) cinnamon
Instructions:
- Preheat oven to 350 degrees and line an 8x8 baking pan with parchment paper. Spray with cooking spray
- In the bowl of your stand mixer, mix together melted butter, eggs, vanilla and milk or milk substitute
- In a separate bowl mix together all the dry ingredients
- In a separate bowl mix together all the dry ingredients
- Add the dry ingredients to your main mixing bowl and mix on a medium speed for at least one minute
- Pour half the batter into prepared 8x8 baking pan
- Peel, core and shred apples. Place into a bowl, add brown sugar, cinnamon and mix well
- Add 1/2 the grated apple mixture on top of the batter in the pan
- Pour the rest of the batter over the top and make sure to cover everything
- Add the rest of the apple mixture on top
- Bake for 60-65 minutes or until a toothpick comes out mostly clean
- Let cake cool for about 10 minutes before drizzling on your powdered sugar and milk or milk substitute glaze on top! ENJOY!
How to store leftover cake
With most gluten free items I have found immediate freezing in an airtight bag is DEFINITELY the way to go. Cut up the cake into portion size pieces, place in a freezer bag and place it in the freezer. Thaw in the microwave or on the counter for a few hours before eating. GF baked goods seem to dry out quickly when left out on the counter or in the fridge. They can last in the freezer for up to 4 months!
