Tips for baking these cookies
Once you have pushed the chocolate kiss into the cookie, they will get soft. The chocolate can take up to 2 hours to harden again after baking so plan accordingly Place finished cookies in the fridge if you need them to harden more quickly.

Ingredients:
- 5 Tbsp butter *coolish room temp (70g)
- 1/2 cup creamy peanut butter (132g)
- 1 egg
- 1/2 tsp vanilla
- 1 Tbsp water
- 1/2 cup white sugar (100g)
- 1/2 cup brown sugar (100g)
- 1 1/2 cups Parker House Gluten Free Flour (210g)
- 1/2 tsp baking powder (2.5g)
- 3/4 tsp baking soda (4.5g)
- 1/4 tsp salt (1.5g)
- 1 1/2 tsp xanthan gum (4.5g)
- 1/2 cup sugar for rolling (100g)
- About 36 unwrapped Chocolate Hershey Kisses
Instructions:
- Preheat oven to 350 degrees and line a large baking sheet with parchment paper
- In the bowl of your stand mixer, cream together the butter, sugars and peanut butter
- Add in the egg and vanilla and cream together
- In a separate bowl mix together all the dry ingredients
- Add the dry ingredients to your main mixing bowl and mix until a solid dough forms
- Roll dough into 1 inch balls, drop into sugar and coat completely
- Place on your baking sheet (12 cookies per sheet)
- Bake for 9-10 minutes
- While the cookies are baking, unwrap the Hershey Kisses
- When the cookies are done baking, take them out of the oven and immediately push a chocolate kiss into the center of each cookie.
- Let cookies cool for 5 minutes before carefully transferring them to a cooling rack.
How to store leftover cookies
With most gluten free items I have found immediate freezing in an airtight bag is DEFINITELY the way to go. These cookies can easily be thawed out by being left back out on the counter or popped into the microwave for 15-20 seconds. GF baked goods seem to dry out quickly when left out on the counter or in the fridge. They can last in the freezer for up to 4 months!
